This is the kind of Fourth of July recipe that disappears before the fireworks even start. BBQ chicken, cheesy cornbread, corn, beans, and just enough kick to make it fun. Easy cookout food, no fancy skills required. Ingredients For the filling: * 3 cups cooked shredded chicken, rotisserie works great * 1 cup BBQ sauce * 1 can corn, drained * 1 can black beans, drained and rinsed * 1 cup shredded cheddar cheese * ½ cup diced red onion * ½ cup diced jalapeños or mild green chiles * 1 teaspoon garlic powder * 1 teaspoon smoked paprika * Salt and pepper to taste For the topping: * 1 box cornbread mix * Ingredients needed on the box, usually egg and milk * ½ cup shredded cheddar cheese * 2 tablespoons melted butter * Optional: sliced jalapeños on top Directions 1. Preheat oven to 375°F. 2. In a large bowl, mix shredded chicken, BBQ sauce, corn, black beans, red onion, jalapeños, garlic powder, smoked paprika, salt, and pepper. 3. Spread the mixture into a greased 9x13 baking dish or foil pan. 4. Sprinkle cheddar cheese over the chicken layer. 5. Prepare cornbread mix according to the box directions. 6. Spoon cornbread batter over the top. It does not have to cover perfectly. 7. Add extra cheese and jalapeño slices on top if using. 8. Bake for 25 to 30 minutes, or until the cornbread is golden and cooked through. 9. Brush melted butter over the top before serving. Serving idea Serve it with sour cream, chopped green onions, extra BBQ sauce, pickled jalapeños, and a big spoon. This is a “set it on the table and let everyone dig in” kind of dish. #FourthOfJulyFood #CookoutRecipes #EasyDinnerIdeas #BBQChicken #SummerRecipes
