🍋 Classic Lemon Cheesecake Recipe Prep time: 30 minutes Bake time: 55-60 minutes Chilling time: 4+ hours (preferably overnight) Yield: 10-12 servings Ingredients For the Crust: 150g Graham crackers (or Digestive biscuits), crushed into fine crumbs 2 tbsp Granulated sugar 60g Unsalted butter, melted For the Cheesecake Filling: 680g (24 oz) Cream cheese, softened to room temperature 200g (1 cup) Granulated sugar 160g (2/3 cup) Sour cream (or full-fat Greek yogurt), room temperature 2 tbsp All-purpose flour 3 tbsp Fresh lemon juice 1 tbsp Lemon zest (finely grated) 1 tsp Pure vanilla extract 3 large Eggs, room temperature Step-by-Step Instructions 1. Prepare the Crust Preheat & Prep: Preheat your oven to 175°C (350°F). Grease a 9-inch springform pan and line the bottom with parchment paper. Mix & Press: In a medium bowl, mix the crushed biscuits, sugar, and melted butter until it feels like wet sand. Press the mixture firmly into the bottom of the pan. Bake: Bake the crust for 8-10 minutes. Remove from the oven and let it cool completely while you make the filling. 2. Make the Filling Beat the Cheese: In a large bowl, beat the softened cream cheese and sugar on medium speed until completely smooth and creamy (about 2 minutes). Add Aromatics: Add the sour cream, lemon juice, lemon zest, vanilla extract, and flour. Beat on low speed until just combined. Add Eggs: Add the eggs one at a time, mixing on low speed just until blended. Do not overmix here, or too much air will get into the batter, causing cracks! 3. Bake the Cheesecake Pour: Pour the filling over the cooled crust and smooth the top with a spatula. Bake: Turn the oven down to 160°C (325°F). Bake for 55 to 60 minutes. The edges should look set, but the center will still have a slight jiggle. The Cool Down: Turn off the oven and crack the oven door open slightly. Leave the cheesecake inside for 1 hour to cool down slowly. (This prevents cracking!). 4. Chill and Serve Refrigerate: Remove from the oven, let it cool to room temperature, then cover and refrigerate for at least 4 hours (overnight is best). Garnish: Before serving, you can top it with a layer of lemon curd, whipped cream, or a few fresh lemon slices. 💡 Quick Tip: For an extra glossy and beautiful finish, add a layer of homemade or store-bought lemon curd on top right before chilling! Enjoy your baking! Let me know if you need any ingredient substitutions or metric conversions. #fyp #annasherbakova #blowthisup #goviral #tiktokcreatorsearchinsightsincentive
