My starter is almost 3 weeks old and I’ve been feeding a 1:5:5 and it’s doubling and doing very well, but stinks of alcohol and acetone. Do I need to feed it more like a 1:10:10 or drop down to a 1:1:1?

Quick question I have to feed my starter today and I don’t think I’m gonna make it to the store. Is it best to wait to feed it till tomorrow or can I switch up my flower? I’ve been using King Arthur organic red wheat flour and I have King Arthur‘s organic bread, flour… and I have organic King Arthur unbleached flour… I’m still establishing her. She is on her third rise today….

I don’t know what to do.. I’m seeing very small improvement. Only rose twice but about 1 cm not much. Vinegary smell. Maybe today a little on the sweeter side. Any advice?

Mine smells good when I feed. A couple hours later it starts to smell acidic next day bum total smell hits you in the nose. So I guess mine just likes to be acidic 🤣. Loaves are still good 🤷♀️

I can’t tell if my starters smell is “acidic” I have a very strong 2 month starter and it peaks wonderfully. Smells sweet while rising but at peak almost immediately smells like cheese lol what’s going on?

Ok I need help… 😩 I skipped a feed, and then I gave her a high feed 50g starter, 100g flour, 100g water.. because I’m building up for a farmers market. But she did not rise at all all night long .. so I tried to rescue it this morning by feeding 25g starter, 80g flour 20g whole wheat flour, and 85 g water… it still hasn’t rose .. is it a lost cause ? I’m supposed to be mixing dough tmw 😩😩😩 I’m so doomed

Omg when I googled it (mine smells a little acidic / beery) it said to do 1:4:4! I’ll stick to peak to peak now

So I got back from vaca took mine out of the fridge on Sunday. She smells not like nail polish remover but sweet slightly sour. Can i make a loaf tonight? I have never put mine in the fridge that long. She bounced back and is responding well to life outside the fridge just unsure about the smell. It isnt strong but its there
