Peel and dice the potatoes into small cubes. Rinse well, then pat dry. Dice the carrots, onion, and mince the garlic. 2. Heat a drizzle of oil in a large pot or deep skillet over medium heat. Add the onion and cook for about 1 minute. Stir in the garlic and cook for 30 seconds, until fragrant. 3. Add the ground beef and begin browning. While it cooks, season with the oregano, cumin, garlic powder, salt, pepper, and chicken bouillon. Continue cooking until the beef is mostly browned. 4. Add the diced potatoes and carrots, stirring everything together. 5. Pour in the tomato sauce, then fill the empty can with water and add that as well. If you need more liquid, add a little chicken broth or beef broth until everything is lightly covered. 6. Stir well and bring the mixture to a gentle simmer. Add the serrano peppers, then cover and cook until the potatoes and carrots are tender, about 20–30 minutes. 7. Taste and adjust seasoning if needed. Serve over rice or enjoy with warm tortillas. I love adding sliced avocado on the side, and a pot of beans makes the perfect addition.
