@mirsdairyfree: Date&Cashew Chickpea Brownies - 5g fibre and 13% of your daily iron per serving (single recipe serves 8, doesn't include melted chocolate) - I like using cashew butter because it's soo creamy, but you can use whichever nut butter you have on hand:) Also, I made a double recipe in a 9x9 pan, but the below is a single recipe which works best in a 8.5x4.5 Loaf Pan - Recipe: 1. Preheat oven to 350F 2. Soak 1/2 cup pitted dates in hot water for 15mins, then drain. 3. Blend the dates with 1x 540ml can of rinsed/ drained chickpeas, 1/2 cup cashew/nut butter, 1/3 Cup Cocoa Powder, 1 tsp salt and 1 tsp vanilla - until smooth. 4. Spread evenly in a parchment lined loaf pan and bake in the oven for 30mins at 350F. 5. MUST let cool for atleast 15mins to firm up before slicing. 6. *OPTIONAL melt 1/4 cup choc chips with 1 tsp coconut oil in the microwave for 30 seconds at a time, stirring until fully melted.
