What I make when I really don’t want a pile of dishes afterwards. FULL RECIPE BELOW Ingredients For the Chicken 3–4 chicken breasts, thinly sliced Italian-style breadcrumbs, enough to coat the chicken 1 teaspoon paprika Salt, to taste Oil, for frying For the Pasta 4 cups water 1 pound pasta 1 cup heavy whipping cream 2 tablespoons chicken bouillon 1 tablespoon Italian seasoning 1 cup Parmesan cheese 1–2 tablespoons all-purpose flour Water, as needed for the flour slurry Veggies: Broccoli and/or spinach (we didn’t have any so I added fresh tomatoes but the kids didn’t like the tomatoes, my husband and I did though) Instructions Season the thinly sliced chicken breasts with salt. Combine the Italian breadcrumbs with paprika, then coat each piece of chicken. Heat a little oil in a large skillet over medium heat. Cook the breaded chicken until golden brown and cooked through, flipping as needed. Remove from the pan and set aside. In the same pan, add 4 cups of water and the pasta. Cover and simmer for 12–15 minutes, or until the pasta is cooked, stirring occasionally. (If adding broccoli, add towards the end of cooking the pasta so it can steam a little.) Add the heavy whipping cream, chicken bouillon and Italian seasoning. Stir well and let it simmer. Adjust according to your preference - you can add more cream, chicken bouillon, Italian seasoning, black pepper. Thicken it up. Mix 1–2 tablespoons of flour with a little cold water to make a smooth slurry. Turn the heat down. Slowly stir it into the pasta and sauce. Continue simmering until the sauce reaches your desired consistency. Stir in Parmesan cheese. Serve. Slice the crispy chicken and place it over the creamy Parmesan pasta.
