Empanadas (not authentic)  Just me cooking in the kitchen with what I have!  In a big pot add in 2-3 chicken breasts, a peeled onion cut in half, a whole garlic head with the top cut off, 2 bay leaves and a big scoop of chicken bouillon. Then fill with water, and boil until the chicken is cooked. 30min for thawed chicken around 45min for frozen but make sure you check it. Then shred.  I finely diced a green pepper and three sweet red peppers, a yellow onion, and a tomato. (Also garlic I forgot to show it) sauté in a pan with some oil until they’re softened, season with Mexican oregano, cumin, garlic, and onion powder, and salt and pepper, then add a can of tomato sauce (8oz) and around 1/2-1c of the chicken broth that the chicken cooked in making sure to strain it out.  Cook for a few minutes and then set aside.  To a bowl add some masa (instant corn masa flour) then I just strained in more of the hot chicken broth and mixed it until I got the right consistency. It should be thick and slightly sticky, but shouldn’t stick to your hands. Take a ball and put it in between two pieces of plastic wrap or Ziploc bag or you can use a tortilla press if you have one. I used two cutting boards and pushed it down until I got around shape, put a little filling in there and folded the top over to match up the seams. Then I used a bowl to push down to seal and removed the excess around it. Repeat!  Shallow fry in canola oil or oil of choice until both sides are golden brown.  For the sauce, I didn’t measure, but I added a couple handfuls of cilantro, a few green onion stalks, a couple cloves of garlic, half a jalapeño, a splash of oil, salt and a splash of water.
