Savory, slightly sweet, and an easy weeknight take on bulgogi made with ground beef. Ingredients Bulgogi • 1 tbsp sesame oil • 3–4 zucchini, sliced diagonally into half-moons • 1 lb ground beef • 6 cloves garlic, minced Sauce • 2 tbsp soy sauce • 3 tbsp gochujang • 1½ tbsp honey • 1 tsp black pepper • 1 tsp cornstarch To Serve (optional) • Cooked rice • Sliced avocado • Sesame seeds Method 1. Cook the Zucchini Heat sesame oil in a pan over medium heat. Add zucchini and cook until tender but still slightly firm. Remove and set aside. 2. Cook the Beef In the same pan, cook ground beef until browned, breaking it apart. Add minced garlic and cook for another 1–2 minutes. 3. Make the Sauce Whisk together soy sauce, gochujang, honey, black pepper, and cornstarch. 4. Combine Pour sauce into the beef and simmer until slightly thickened.
