For Windows that would be: File -> Options -> Trust Centre-> Trust Centre Settings -> Privacy Options-> Privacy Settings-> uncheck every option there.

I no longer use Microsoft Office. I now use Only office. Another great alternative is OpenOffice, or if you like, there's also LibreOffice.

This actually doesn’t work because they still monitor it even if you turn it off because you agreed to it in the terms of use when you signed up for it simple don’t use Microsoft at all
