Creamy Cajun Baked Chicken over Chorizo Tagliatelle 😍 This is one of those dinners that tastes way more indulgent than it actually is. Juicy Cajun chicken, crispy chorizo and creamy cheesy pasta, while still being high protein and proper comforting.  If you love this kind of comfort food made lighter, my cookbooks are FULL of dinners like this 📕✨ Ingredients (serves 2):  2 × 100g chicken breast fillets, butterflied 2 tsp Cajun seasoning ½ tsp smoked paprika ½ tsp garlic granules Salt & black pepper 120g dried tagliatelle 40g chorizo, diced 1 tsp chopped garlic 1 heaped tbsp tomato purée 130ml reduced-fat single cream alternative 40g reduced-fat mozzarella, grated 50–70ml reserved pasta water Fresh parsley (optional) 💕Start by preheating the oven to 200°C fan. Season the chicken all over with the Cajun seasoning, smoked paprika, garlic granules, salt and pepper, then bake on a lined tray for 10 minutes until just cooked. 💕Cook the tagliatelle in well-salted water. Reserve a mug of pasta water, then drain. 💕Heat a large non-stick pan over a medium-high heat and fry the chorizo for 3-4 minutes until crisp. Remove and set aside leaving the oils in the pan. In the same pan, lower the heat slightly and cook the garlic and tomato purée for around 45 seconds. Pour in the cream and let it bubble for 2–3 minutes until lightly thickened. 💕Spoon a little sauce over each chicken breast, scatter over half the mozzarella and return to the oven for 2 minutes until melted. 💕Add 50–70ml pasta water to the sauce to loosen, stir in the remaining mozzarella, then toss through the tagliatelle and half the chorizo until glossy and coated. Serve topped with the Cajun chicken, remaining chorizo and a sprinkle of parsley if you fancy.
