Bigger, cheesier and honestly unreal 🤤 If you love comfort food like this, I’ve got loads of recipes just like this in my debut cookbook —link in bio and link here 🤍 ⸻ 🥔 Hunters Chicken Jacket Potato Tray Bake (Serves 4) Jacket Potatoes • 4 large baking potatoes • Olive oil • Sea salt Chicken • 3 chicken breasts, diced • 1 tbsp paprika • 1 tbsp BBQ seasoning • 1 tbsp adobo complete seasoning (or Knorr All Purpose) • 1 tsp chicken stock powder • 1 tsp garlic powder • 1 tsp onion powder • 5–6 tbsp honey BBQ sauce (e.g. Sweet Baby Ray’s) • 4 tbsp water • Small handful smoked bacon bits (or 2 rashers, finely chopped) Cheese Sauce + Filling • 50g butter • 50g self-raising flour • 400–450ml milk • 120g mature cheddar • 80g mozzarella • 80g Red Leicester • Extra 100g mixed cheese (for stuffing + topping) Method 1. Pierce potatoes, rub with oil & salt, wrap in foil and air fry at 180°C for 1 hr 10 mins. Unwrap and cook 10 mins more until crispy. 2. Season diced chicken with all dry seasonings. Fry until browned, add BBQ sauce, water & bacon, then simmer until thick and cooked through. 3. Melt butter, stir in flour, then whisk in milk. Add cheeses and stir until thick and creamy. 4. Place potatoes in a tray, cut a cross, fluff inside, add butter, salt & pepper and a handful of cheese. 5. Spoon chicken over each, pour over cheese sauce, add extra around the tray, then top with more cheese. 6. Air fry or bake for 3–5 mins until golden and bubbling. 7.
