Making Pozole rojo for the first time! Recipe inspired by @Itzel🤍 -4-5 boneless chicken thighs OR pork! I just prefer chicken. -1 white onion, peeled -garlic head, halved -2 bay leaves -big scoop of chicken bouillon -8 chile Guajillos -2 chile anchos -1-5 chile de arbol (if desired for spice) -2tsp pepper -2tsp oregano -1.5tsp cumin -1tsp salt (add more for taste later) -4 garlic cloves -60oz white hominy, rinsed and drained Topping -cilantro -white onion, chopped -radishes In a big pot, add chicken, onion, garlic head, bay leaves and chicken bouillon and bring to boil, simmer until chicken is cooked, around 30min. Remove the onion, garlic and bay leaves and shred the chicken. Add the shredded chicken back. De stem and De seed Chile guajillos and anchos and rinse all the Chiles. Boil in a small pot of water for 10 minutes. Then add them to a blender with the water they boiled in, pepper, oregano, cumin, salt and garlic cloves. Blend until smooth then strain into the pot with the chicken. Rinse and drain the hominy and add it to the pot. Cook 10min and taste for seasonings. Enjoy!
