@emmaonuora: MY FAVOURITE PASTA: CHILI CRISP VODKA PASTA 👅🫦 Ready in the time it takes to cook the pasta Ingredients (1 serving): • 80g pasta (calamarata) + Pasta water • 2 tbsp chili crisp oil • 2 large garlic cloves, minced • 2 big tbsp tomato purée • 50 ml vodka • ~180 ml heavy cream • 1 cup finely grated Parmigiano • Salt & black pepper, to taste Instructions: 1. Cook your pasta in well-salted water until al dente. Before draining, save a good cup of pasta water. 2. In a pan over medium heat, add the chili crisp oil. Toss in the minced garlic and let it sizzle gently (don’t burn it—just fragrant). 3. Stir in the tomato purée and cook for 2-3 minutes. Pour in the vodka and let it bubble for about a minute so the alcohol cooks off. (No need to light it on fire as I did, but if u do please turn off your fan!) 4. Lower the heat and add the heavy cream. Stir until smooth and slightly thickened. And lastly gradually add Parmigiano until melted and emulsified 5. Add the drained pasta straight into the sauce.
