@helentaylorrr: oh the cake is too i guess you’ll need: - 3 passion fruits, sliced in half - 240ml olive oil - 4 eggs - 250g sugar - 1/2 cup desiccated coconut - 300g self-raising flour - 2tsp baking powder (for the drizzle): - 3 passion fruits, sliced in half - 1/2 cup sugar (to serve): - creme fraîche / full fat greek yogurt method: 1. begin by spooning out the pulp of each passionfruit into a large bowl. 2. add in your eggs, olive oil, sugar, desiccated coconut, flour and baking powder and whisk until thoroughly combined. 3. pour into a lined loaf tin and bake at 170c for at least 1 hour. 4. meanwhile, spoon out the rest of the passionfruit pulp into a saucepan along with the sugar and place on a medium heat. 5. keep stirring and let it simmer for a few minutes. 6. check your cake is cooked by placing a thin skewer all the way through the centre and it should come out clean. if not, keep baking and place a layer of foil on top to stop it from browning too much! 7. once baked, remove from the oven and poke with a wooden skewer all over at different depths. 8. pour over your passionfruit drizzle (but leave some extra to serve!) and leave the cake tin the tin. 9. remove the cake from the tin and carefully peel away the paper. 10. cut into generous slices and top with a dollop of creme fraîche or full fat yogurt… enjoy xxx🖤 @DE ROCOCO #baking #sweettreats #cake #yogurt #Summer
