Roast on a lined tray at 400°F (200°C) for 40–50 minutes, until deeply tender and caramelized at the edges. Cook the taco beef → Heat a skillet over medium. Add ground beef and chopped onion together. Cook 5–7 minutes until browned and slightly crispy. Stir in taco seasoning and tomato paste. Add 2 tbsp water or broth and simmer 1–2 minutes until glossy and thick. Assemble → Slice sweet potatoes open lengthwise. Use a fork to mash the inside and fluff. Season lightly with a squeeze of lime and tiny pinch of salt. Spoon in smoky beef. Top with avocado, pico de gallo, and a dollop of Greek yogurt.
