I make something similar that we call Cowboy Beans. We use pink beans instead of pinto and use some Aji Amarillo paste and Aji Panca paste. 🤌🏻

I made this Sunday night! I don’t do spicy foods because of GERD so I used the regular ranch beans, I also added purple onion, bell pepper, and scallions . It was so good!!! Made some Lacey cornbread to go with it!!

This is my mamas beans! We only use ranch style. No sausage. We also add chipotle seasoning, cumin, chili powder, paprika, tomato sauce & fire roasted tomatoes. I’m going to make them with beef & sausage now!!
