I had been reading about letting your dough rest for a half hour before baking. I gave it a go on my last cookie bake. My cookies ended up dry and crumbly. I have never had that issue before when making my gluten free cookies and I always went straight to baking after mixing. I don’t think I will do that again.

I did not know this, my hubby is Celiac, I am going to try this next time I make GF cookies. Is this true for all gluten free bake goods? I make a lot of GF muffins.

Gluten free flours take longer to hydrate than normal flours, that’s one of the many reasons why resting is important!! I also love testing my dough in the fridge for at least a few hours (also cuz I’m lazy and don’t wait for my browned butter to become solid again lol)
