Traditionally Chongqing people add sesame oil (a ton) and minced garlic as the dipping sauce. Sesame oil will help wash off excessive spicy soup/oil on the food. Another trick to fight the spiciness is to add some vinegar to the dipping sauce.

Haha I believe the name of the restaurant is 井到吃 Jing dao chi, as Jing dao in some southern dialects mean non-stopping
