FUN FACT: the original recipe for beef stroganoff cause for cubed steak pan seared in a sour cream, mustard sauce. It has been altered and changed so many different ways. Now we add mushrooms and onions as well as shaved steak or ground beef. 😉

I think the "must" comes from the fact that I have known a lot of people who consider cream of mushroom soup their "secret ingredient." So, if you don't use it, you aren't violating any culinary rule, you're violating Grandma's rule!

Quick question! What about all the extra liquid from the mushrooms? I'm always afraid to add broth until most of the mushroom water cooks off.
