Fresh lamb is cooked first, then the rich stock with its fat is mixed with wheat and spices. The meat goes back in, and everything slowly cooks together. Then comes the real technique… They place it over hot embers no flame, just deep heat cover it, bury it in the ground, and seal it with thick blankets. It stays like this for 24 hours. The next day, they open it and start mixing using strong palm sticks, breaking everything down until it becomes smooth, rich, and full of flavor.
