The one I came up with for my wife is "höchstwahrscheinlich" which has all the same difficult sounds as "Eichhörnchen" but with the added difficulty of switching between "ch" and "sch" sounds.

Weirdly I struggle with the word rechts but for some reason I nailed it when I had an ulcer on my tongue, like it was forced into the right position to pronounce it so life hack. Eat a a lot of salty food before going to Germany to get an ulcer and speak like a native 😂
