I HIGHLY RECOMMEND sprinkling any ground poultry with baking soda (just a liiittle bit don't go crazy!) and adding in broth/water+bouillon. the Baking Soda does something to the pH I'm not smart enough to articulate that retains moisture and crisps up so much better!
