COCONUT MACAROON ICE CREAM SANDWICHES Soft, chewy coconut macaroons (not to be confused with French macarons) become top and bottom of these amazing passover-friendly ice cream sandwiches. So easy to pull off! Just use a cookie cutter to help mold the macaroons into perfect round disks that envelop your favorite ice cream flavor. Finish off with a chocolate dip and some flaky salt. YUM! For the ice cream sandwiches: Coconut macaroons (I used store-bought) Ice cream, slightly softened For the chocolate dip: 1 ½ cups chocolate chips 2 tablespoons coconut oil Flaky salt, for sprinkling Make the ice cream sandwiches: Line a plate or tray with parchment. Depending on the size of the macaroons, use a cookie cutter anywhere between 2 to 3 inches in size. Arrange a cookie (or two if they’re smaller) top side down inside the cookie cutter. Press down with your fingers out to the sides of the cutter to form a ⅓-inch thick disk. Gently release from the cutter and repeat with more cookies. Fit a macaroon disk into the bottom of the cutter. Use an ice cream scoop or two spoons to portion 3 to 4 tablespoons of ice cream on top of the disk. Press down gently with a spoon and out to the sides. Top with another cookie, top side up. Gently release the sandwch from the cookie cutter onto the prepared tray. Place into the freezer while you make more sandwiches. Freeze sandwiches for at least 1 hour. Make the chocolate dip: Pour the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave on high in 30-second increments, stirring between increments, until the chocolate is smooth and melted, 60 to 90 seconds total. Remove the sandwiches from the freezer. One by one, dip halfway into the chocolate, letting excess drip back into the bowl. Arrange back on the parchment-lined tray and sprinkle the chocolate-dipped side with salt, Freeze another 20 to 30 minutes. Sandwiches can be stored in an airtight container for up to 2 weeks.
