Lamb Tagine						serves 6 Prep time: 20min Cooking time: 1.5 - 2 hrs Ingredients: 100ml grapeseed oil  1.2kg lamb neck, trimmed and cut into 3cm dices  2 onions, thinly sliced 4 cloves garlic, finely chopped  3 tsp ground cumin 2 tsp ground coriander 2 cinnamon quills  1 tbs harissa  100g raisins  3 quarters preserved lemon, flesh and pith removed  2 x 400g tins cherry tomatoes 500mls My perfect beef stock  80grms flaked almonds, toasted  ½ bunch coriander, picked  80grms Greek yoghurt  Salt and pepper Method: In a large mixing bowl, place the diced lamb and season with salt and pepper, mix to evenly coat the lamb.  In a large casserole pot on a high heat, place in half the oil, sear the seasoned lamb in small batches on all sides until golden brown, remove from the pan and place in a bowl to the side, repeat for all remaining lamb.  In the same pan add in the remaining oil on a medium heat, place in the onions and garlic and cook for 5-6 mins or until the onions start to caramelise. Add in the cumin, ground coriander and harissa and cook for 2-3 mins consistently stirring until the spices are roasted off and fragrant, add in the raisins, half of the preserved lemon (reserving half for garnish) with the tin tomatoes add the lamb back into the pan and beef stock, bring to a simmer and cover with lid cook over a low heat for 1.5 – 2 hours or until the lamb is tender, remove from the stove and allow to cool slightly.
