✨ Welcome back to my series: oat recipes you’ll actually want to eat! ✨ As you know, I love cake for breakfast - in fact, any dessert for breakfast is a win in my book! So this week, I’m bringing you my blueberry cheesecake baked oats 🥰🫐 Each serving contains 430 calories, 10.6g protein, and 6g fibre. Ingredients – makes 4 🥣 160g porridge oats 🌿 40g self-raising flour 🧂 1 tsp baking powder 🥛 180ml milk (oat milk works well) 🥚 2 eggs 🍦 1½ tsp vanilla extract 🫒 40ml olive oil 🍁 65g maple syrup 🧂 Pinch of sea salt 🫐 150g blueberries 🍯 1 tsp honey 🍶 100g Greek yoghurt 🌱 15g chia seeds (optional) Method: 1️⃣ Preheat oven to 180°C and lightly grease a medium baking dish. 2️⃣ In a small pan, cook blueberries, honey and a splash of water over medium heat until jam-like. Cool slightly. 3️⃣ Mix yoghurt with ½ tsp vanilla and 1 tsp maple syrup. 4️⃣ Pulse oats in a blender until roughly chopped. 5️⃣ In a bowl, whisk milk, remaining maple syrup, eggs, olive oil and 1 tsp vanilla. 6️⃣ Stir in oats, flour, baking powder, chia seeds (optional) and salt. 7️⃣ Pour into dish, then swirl in blueberry compote and yoghurt mix for a marbled effect. 8️⃣ Bake 40–45 mins until golden and set. 9️⃣ Cool slightly, then serve warm with extra yoghurt, blueberries and maple syrup. 💡 Serving tip: You can make extra blueberry compote and vanilla yoghurt to serve on the side if you prefer! 🧊 Storage: Lasts 3–4 days in the fridge - just heat in the microwave before serving. #Nutracheck #Healthbreakfast #Breakfast #bakedoats #oatrecipes
