chicken shawarma bowl✨ - this recipe is one of my go-to meal prep options for the week. It is a vibrant, colorful dish packed with a mouth full of goodness in each bite!  what you’ll need:  Chicken Shawarma  • 2 pounds chicken thighs, cut into bite size pieces  • 1/4 cup olive oil, divided  • 3 tbsp lemon juice  • 6 garlic cloves, minced  • 1 tsp coriander  • 1 tsp cumin  • 1 tsp smoked paprika  • 1 tsp dried oregano  • 1/2 tsp turmeric • 1/4 tsp allspice  • 1/4 tsp cardamom, optional • Salt and pepper to taste Yellow Rice  • 2 cups basmati or long grain rice, washed • 3 1/2 cups water • 2 tbsp olive oil • 1 large bay leaf • 1/2 tsp turmeric  • 1/4 tsp cumin  • Salt to taste  Garlic White Sauce  • 1/2 cup Greek yogurt  • 2 tbsp mayo • Juice 1/2 lemon  • 1 to 2 garlic cloves, minced  • salt and pepper, to taste  • Water (to thin out sauce)  For Serving • Romaine Lettuce, chopped  • Tomatoes, chopped  • Cucumbers, chopped  • Pita Wedges here’s how to make it:  Chicken Shawarma - in a bowl, add and mix together the chicken, 2 tbsp oil, garlic and all of the seasonings. Cover and marinate for at least 30 min or overnight in the fridge. Heat the remaining 2 tbsp oil in a skillet over med-high heat. In batches, add and cook the chicken until golden brown and fully cooked, about 4-5 min per side. Remove from pan and set aside. 
Yellow Rice -  heat the oil in a pot over medium heat. Add the rice and toast for 2-3 min. Next, add and mix in the water, cumin, turmeric, bay leaf and salt. Bring to a boil and lower the heat to simmer. Cover pot and cook for 18-20 min or until all of the liquid is absorbed. Once cooked, removed bay leaf and fluff rice with a fork. Set aside. White Garlic Sauce - in a bowl, add and whisk all of the ingredients together until smooth. For a thinner sauce, mix in water 1 tbsp at a time until desired consistency is reached.
