Evaporated milk is great for gravy. I didn’t realize that’s why my aunts was so much better than mine.

Thinking that gravy would be yummy over steamed white rice. With some crescent rolls on the side. This sausage gravy is almost exactly how I make from scratch stroganoff sauce - except add chicken broth and milk. Might try this sauce instead!

I like adding a bit of cayenne and pepper to the roux. It helps elevate the sausage. Add a fried egg to the top...mmmmm good eating.

I love that you say "it's okay if you don't know how to do something...."! I'm sure you know how helpful those words are since you say them, but they are so kind! You literally give people permission to try and to learn new things things!

I like mine thick enough that the bubbles plop and close slowly when the gravy is bubbling. I also add cayenne to my serving

Matthew, the only thing I could cook before was scrambled eggs and toast. Then covid happened and I met my partner, quarantined together, & got sick of takeout quickly. i was determined to learn how to cook. Tiktok helped me so much in that time and thanks to your recipes (&cookbooks) and others, I'm feeling more confident and have since gotten lots of practice. You were definitely one of my favorites for making me feel better about not knowing how to so stuff and for that I have now learned, and gained confidence in my cooking. the way you use what you have and offer substitutions have gone a long way. and yes your chicken cobbler stays on rotation in this house 💙
