I'm Cajun and most of my family will put some of the potato salad in the gumbo and they love it. I'm not a fan. they will also put some eggs in there also I'm not a fan. it's a texture thing for me.

It's good together.. if you think about you eat potato salad and rice with gravy.. So it's pretty much the same.. it's very good. Try it.. It a country thing.. 😁😁😁 I eat mine with chicken and sausage gumbo with potato salad on the side.. Chef's kiss 💋
