@fisherzhangs_in_china: Lamb's head is a delicacy in northern China, and trying it in Chengde—a region known for preparing it well—was a fascinating experience for me as someone from Wales. We farm a lot of sheep back home and eat lamb regularly, though never the head. My father-in-law and I thoroughly enjoyed the dish, and my daughter even surprised us by giving it a try. That said, many Chinese people—especially the younger generation—wouldn't eat it themselves, and some from the south may never have had the chance.
