I’ve used everything for a binder when smoking. I can’t taste any of it. I recently tried no binder. I did a simple GSP and let it sit in the fridge over night. Pulled it out let it sit for about 2 hrs on the counter and used my favorite rub. Best bark I’ve ever had

After many years of smoking meat I used a binder once. Season your meat let it sit for about 15 minutes and the meat will sweat and act as a binder.

I’ve never needed a binder. Seeing them get showcased so often is borderline abuse😂. Dry brine in salt, the meat “sends” protein glue to the surface and the right amount of dry rub sticks just right.
