Boiled Beef & Fresh Vegetable Salad 🥩🥒 A fresh, colorful salad with tender boiled beef, crunchy vegetables, and a tangy soy-lemon dressing. Servings: 4 Ingredients * 400 g (14 oz) boiled beef, thinly sliced into strips * 4 mini cucumbers, sliced * 4 medium tomatoes, seeded and sliced * ½ red bell pepper, diced or chopped * ½ yellow bell pepper, diced or chopped * ½ orange bell pepper, diced or chopped * ½ bunch fresh parsley, finely chopped 1/4 red onion sliced Dressing 2-3 cloves garlic * Juice of ½ lemon * ¼ cup extra-virgin olive oil * ¼ cup soy sauce (start with 2 tbsp and adjust to taste) Instructions 1. Cook the beef: Boil the beef in water until tender. Let it cool completely, then slice into thin strips. 2. Prepare the vegetables: Slice the cucumbers, remove the seeds and watery centers from the tomatoes, and slice them. Dice or chop the bell peppers, red onion and finely chop the parsley. 3. Make the dressing: Whisk together the garlic, lemon juice, olive oil, and soy sauce, or add the dressing ingredients directly to the salad. 4. Combine: Place the sliced beef, cucumbers, tomatoes, bell peppers, onion and parsley in a large salad bowl. 5. Toss: Pour the dressing over the salad, or add each dressing ingredient directly to the bowl. Toss gently until everything is evenly coated. 6. Serve: Enjoy immediately or refrigerate for 20–30 minutes to allow the flavors to blend. Tip: Soy sauce is already salty, so start with 2 tablespoons, taste, and adjust as needed. Avoid adding extra salt until you’ve tasted the salad. #salad #healthy #food #meal #usa
