I have a question hope you can answer it, just started canning I have a Presto canner. I canned something yesterday and after an hour of rolling boil I still didn’t see no steam, I heard it, I could feel it but didn’t see it like I do in videos. I know you let it steam for ten minutes before you put the weight on, so I googled it and it said after an hour just put the weight on so I did etc etc when everything cooled off I took them out and put them on a dish towel some had sealed some had not. I was so upset. When I came back to them an hour or so later all had sealed. My question, if I can hear it and feel it can I set my timer? Thanks

We canned up a breakfast hash a while ago. Potatoes, peppers, zucchini, with garlic & onion to taste. If you are looking for variety- 100% worth it.

Is ‘pressure canning’ just a matter of boiling the filled jars in a big pot without a lid? I found a large old aluminium pot in my parent’s garage and thought it might be okay for the job but am not sure.
