This recipe was super easy to throw together and was full of flavour😍a new lunch time fave! get instant access to hundreds more high protein recipes plus make your own meal plans + get ready-made shopping lists when you join my @kirstyskitchenclub app - link to FREE TRIAL in bio ✨ *makes 2x servings* Ingredients For the chicken: - 300g chicken breast - 1/2 tsp paprika - 1/2 tsp onion granules - 1/2 tsp garlic powder - 1/2 chilli powder - 1 tbsp soy sauce - Pinch of salt & pepper Other: - 120g pasta ( uncooked weight ) - 100g baby plum tomatoes, chopped - 1/4 cucumber, chopped - Handful of rocket leaves/ arugula - 100g sweetcorn - 1 heaped tbsp cream cheese ( I used Philadelphia lightest ) - 3 tbsp light mayonnaise - 2 tbsp sweet chilli sauce - 30g feta cheese - Pinch of salt & pepper Method - Pop your pasta on to boil. - Slice your chicken breast into small bite size chunks then add to a heated pan with some cooking spray/oil. - Season with paprika, chilli powder, onion granules, garlic powder, salt, pepper and soy sauce. - Cook for 12-15 minutes, stirring frequently until golden and no longer pink. - Drain your pasta and leave to cool. - Meanwhile, prep your veggies by chopping your cucumber, tomatoes and rocket. - Add your cooked pasta, chicken, tomatoes, cucumber, sweetcorn, rocket, cream cheese, mayo, sweet chilli, feta, salt & pepper to a bowl then mix until fully combined and enjoy!!
