I got really burned as the designer working freelance for this style of business. The clients tend to always push for more, even knowing the rules. To work, boundaries have to be majorly set. Otherwise, I’ve found they are just trying to fill a full time graphic design position, and would try to push in a ton of work. Just my experience, but sounds like you have lovely clients!

really curious what you're charging for this. I am also a designer and I basically have the same unlimited setup with my clients except that I'm charging them an hourly. I do not nickel and dime, and honestly I feel like I undercharge, but I cannot see how it would be more profitable or even equally profitable for me to charge them a flat rate. Tell me more!

This can only work with the right set of clients who have the kind of work that can be knocked out quickly. One bad client or even a few major projects would grind this arrangement to a halt. Sounds like it’s working well for your current roster of clients but I wouldn’t recommend this for everyone.
