I could feel the owner's sincerity as he steamed the fresh batter—made every hour—wrapped in banana leaves. After a hearty meal, I tried to pay, but he insisted on refusing, saying, "You are my guest, and a guest of India." idli is made with both dal and rice in a 1:4 ratio. it’s usually left overnight in the counter to ferment and then it’s ready to use. they kinda resemble fluffy rice cakes:)
