@justinrolleston: OK OK OK… now this is the best One pan pasta I’ve ever made. Ingredients • 250–300g tagliatelle • 3 tomatoes • 1 eggplant, sliced halves • 1 zucchini, sliced • 1 onion, sliced • 4 cloves garlic • 1–2 tbsp tomato paste • 2 cups bone broth • 200ml cream • ½ cup parmesan • 1–2 tsp sugar • 1 tsp paprika • Salt & pepper • Olive oil • Parsley Method 1. Onion + garlic in olive oil (2–3 mins) 2. Add eggplant, zucchini, tomatoes, paprika, salt + pepper → splash water, lid on 20 mins 3. Peel tomato skins, mash everything 4. Add tomato paste (1–2 mins) + parsley 5. Pour in bone broth + cream + sugar → simmer 6. Add raw pasta → cook in sauce, stir, add water if needed 7. Finish with parmesan → toss till glossy Finish Extra parm. Optional chilli oil.
