If you actually want to test this theory you should grow your own tomatoes without the use of any chemicals and see if this water does the same thing on those. If it does then the water is simply chemically reacting with the tomatoes

Or…..Tomatoes contain pigments and compounds that react differently depending on pH. In high-pH (alkaline) water, a few things can make the water change color faster than plain tap water:
* The tomato skin and outer cells break down more easily in alkaline conditions.
* Pigments leak out into the water more readily.
* Some pigments actually change color when pH changes.
