So here’s a question I’ve been wondering literally four years. I’ve been a chef for well close to 40 years and I bought my first set of Trident/wustofs before I was 20 when I got my first real line cooking job over the years my knives have changed and now I have some very nice Japanese ones though those trident still work I still use them at home. Why do fishmongers and butchers seem to prefer cheaper knives no judgment there’s probably a very good reason. I’m just wondering.
