There’s a lot missing in the menu at the end as that’s a contemporary menu, we weren’t eating tikka masala in the 70’s we were still eating rabbit (which is delicious btw) and offal is still popular

It also has to do with the choices of the wealthy. When spices were first introduced to Britain, the wealthy used them as they were an expensive status symbol. When they became available to mass market, the wealthy decided to stop using them and rest of society followed
