@glowwithella: Rhubarb “Sour” Gummies Ingredients - 1 cup rhubarb juice* - 2 tbsp lemon juice - 1/4 cup honey (optional) - 1/4 cup grass fed gelatin *Rhubarb Juice - 1.5 cups chopped rhubarb - 1 cup filtered water Recipe 1. To make rhubarb juice, clean and chop rhubarb and add to a pot with filtered water 2. Bring to a light boil, then reduce heat to low and cover, let rhubarb infuse for 30 minutes (rhubarb should be completely softened, mushy, and light pink instead of red in color) 3. Strain all the liquid out of the rhubarb, making sure to get all the juice, and set aside to cool 4. Once juice is cooled, add to a pot and pour over gelatin to bloom for about 5 minutes 5. Once bloomed, place over low-medium heat and stir until gelatin is fully dissolved 6. Remove from heat once dissolved, and stir in lemon juice and honey 7. Pour into molds and let set in the fridge for a couple of hours 8. Remove from molds, and enjoy! I keep mine stored in an air tight container in the fridge and eat them within a week.
