Pop Rocks work by trapping small, high-pressure bubbles of carbon dioxide (CO2) gas inside hard candy. During manufacturing, the candy is melted and pressurized with CO2 at around 600 psi. When this candy melts in your mouth (via saliva), the pressurized gas is released, causing the signature popping sound and sensation.
