@morganpetersonn: we LOVE a simple meal around here 🥬🍠🍗 What I Used: - Sweet potato - Brussels sprouts - Red onion - Italian chicken sausage - Seasonings: salt and @Simply Organic Foods pepper, garlic powder and onion powder - 1-2 tsp olive oil *you can also add greens or grains to this meal, we do sometimes! You could use spinach, arugula, rice, couscous, farro, etc. For the lemon dijon dressing: - 1/4 cup olive oil - Juice of 1/2 a lemon - ~1-2 tbsp dijon mustard - 2 tsp maple syrup - Simply Organic garlic powder, salt & pepper Add chopped veggies and chicken sausage to a large sheet pan and toss with olive oil and seasonings. Bake at 425 for ~30 minutes or until potatoes are soft and veggies are slightly crisp. Prepare dressing while everything bakes.
