@theemilyrangel: Blueberry cream cheese muffins 🫐✨ Ingredients: ⁃ 1/2 cup unsalted butter; melted ⁃ 1 1/2 cup granulated sugar ⁃ 1/2 cup whole milk ⁃ 1/2 cup plain Greek yogurt ⁃ 2 large eggs ⁃ 1 tbsp vanilla bean paste ⁃ 2 cups all purpose flour ⁃ 1 1/2 tsp baking powder ⁃ 1/2 tsp salt ⁃ 2 cups frozen or fresh blueberries Cream cheese filling: ⁃ 8 oz cream cheese; softened ⁃ 1/2 cup granulated sugar ⁃ 2 tbsp flour ⁃ 3 tbsp whole milk Streusel: ⁃ 2/3 cup all purpose flour ⁃ 1/2 cup brown sugar ⁃ Pinch of salt ⁃ 5 tbsp unsalted butter; softened Instructions: In a medium bowl, combine the streusel ingredients and mix until coarse crumbs form. Set aside. In a large bowl, mix the cream cheese filling on medium-high speed until smooth. Transfer to a piping bag and set aside. In another large bowl, whisk together the melted butter and sugar. Add the milk, yogurt, eggs, and vanilla, mixing until fully combined. Gently fold in the dry ingredients. Toss the blueberries with 1 tablespoon of flour, then fold them into the batter. Line a muffin pan with 6 liners and fill each about ¾ full. Insert the piping bag into the center of each muffin and pipe filling until it reaches the top.
