Ingredients For the Pinto Beans 1 lb dried pinto beans, soaked overnight 4 cups water For the Beef and Slow Cooker 3 lbs beef sirloin 2 Tbsp vegetable oil 3 beef bouillon cubes 1 poblano pepper, diced 1 cup red onion, diced 2 tsp minced garlic 2 bay leaves ½ tsp black pepper 1 tsp dried oregano ¼ tsp cumin ⅛ tsp cayenne pepper 1 cup beer, or additional water Green chile, to taste Salt, to taste, added at the end For Serving Tortilla chips Shredded Monterey Jack cheese Instructions Soak the beans. The night before cooking, place the dried pinto beans in the slow cooker. Cover them with several inches of water and let them soak overnight. Do not turn on the slow cooker. Drain the beans. In the morning, drain and discard the soaking water. Brown the beef. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef sirloin and brown it on all sides. Remove the beef from the skillet and set aside. Build the slow cooker. Add the drained pinto beans to the slow cooker. Add the beef bouillon cubes, diced poblano, green chile, red onion, garlic, bay leaves, black pepper, oregano, cumin, and cayenne pepper. Add the liquid. Pour in the beer and 4 cups of water. Stir gently to combine the ingredients. Add the beef. Place the browned sirloin into the slow cooker and nestle it into the beans and broth. Slow cook. Cover and cook on LOW for 10 hours. Keep the lid closed during cooking to retain the heat and moisture. Remove the bay leaves. Once cooking is complete, carefully remove and discard the bay leaves. Shred the beef. Transfer the beef to a plate or cutting board. Shred it thoroughly with two forks, then set it aside. Remove excess fat. Lay paper towels carefully over the surface of the beans and broth, then quickly lift them away. Repeat with fresh paper towels if needed. Discard the towels. Thicken the beans. Transfer about 1 cup of the cooked beans along with some of the broth to a small bowl. Mash them with a fork or potato masher until mostly smooth. Return the mashed beans. Stir the mashed beans back into the slow cooker. This naturally thickens the broth and gives the dish a creamier texture. Add the beef. Stir the shredded beef back into the beans and broth. Season. Taste and add salt as needed. Let the mixture sit for a few minutes before serving so the flavors can settle. Serve.
