WEEK 11 | MEAL 3: BABE ON A BUDGET TAKES THE WEEKLY SHOP 🛒🛒🩷🩷 MEAL 3: SATAY TOFU RICE BOWLS 🍴 2 Portions* ⏰ 20 minutes  Store cupboard essentials: Olive Oil, Salt & Pepper, Corn Flour, Sesame Oil OR Vegetable Oil, Sesame Seeds, Chilli Flakes Ingredients - 300g Extra Firm Tofu  - 2tbsp Corn Flour - Salt & Pepper - 1tbsp Sesame Oil OR Vegetable Oil - 3tbsp Peanut Butter - 1tbsp Soy Sauce - 1.5tbsp Maple Syrup  - Juice of 1/2 Lime - 150-200ml Coconut Milk - Microwaveable Rice - Tenderstem Broccoli - 1tsp Sesame Seeds - 1tsp Chilli Flakes To make... 🍚 Squeeze any moisture out of of the tofu & break into rough pieces. Pop into a container, add corn flour & salt and pepper and give it a good shake.  🍚 Air-fry for 10 minutes at 200 degrees - you could also oven bake (it will just take slightly longer) or pan fry.  🍚 Whilst that cooks, in a pan heat sesame oil, peanut butter, soy sauce & maple syrup together on a low heat.  🍚 As it begins to come together, add coconut milk. Bring to a very gentle simmer and let it thicken - add more coconut milk for a looser consistency if preferred. 🍚 Add your crispy tofu & coat with the satay sauce.  🍚 Serve with rice & tenderstem broccoli and top with sesame seeds & chilli flakes. Enjoy !! XX *BULKING OUT OR DOWN?  This makes 2 portions but the sauce could be easily stretched out if you wanted to grab an additional block of tofu!  🫙 Store in an air-tight container in the fridge. Reheat in the microwave until piping hot. I also had a lot of sauce leftover which I saved in a separate container.  🧊 If freezing, I’d stick to freezing just the tofu in satay sauce.
