literally the go-to easy sheet pan dinner…sheet pan chicken fajitas. 🤤 Add to tortillas or turn them into a rice bowl w your fave fajita toppings.   Recipe below ⬇️    INGREDIENTS · 1 lb boneless, skinless chicken breasts or thighs · 3 bell peppers  · 1 small red onion, or ½ large · 2 Tbsp extra virgin olive oil · ½ c cilantro · Juice of 1 lime ~For Fajita Seasoning Blend~ · 1 Tbsp chili powder · 2 tsp cumin · 1 tsp each: paprika, smoked paprika, oregano, garlic powder, onion powder, black pepper, kosher salt (use ½ tsp if sensitive to salt) DIRECTIONS • Preheat oven to 425℉ (218°C). Line a baking sheet w parchment paper sprayed w olive oil.  • Cut peppers, onion, & chicken in thin strips.  • Add chicken to a mixing bowl with half the olive oil & seasoning blend. Set aside to marinade at least 15 minutes (up to 24 hours if meal prepping).  • Add peppers/onion to the pan with the rest of olive oil + seasoning. Add marinated chicken and spread everything in a single layer.
