An amazing side dish that blows away the traditional creamed spinach in macros so you can nibble guilt free. 🥬 High-Protein Creamed Spinach A creamy, flavorful spinach made with Greek yogurt instead of cream; rich taste, way lighter macros. 🛒 Ingredients • 1 tablespoon olive oil • 1/2 yellow onion, diced • 1 red chile or jalapeño, diced (optional) • 1 garlic clove, minced • 1/2 tablespoon tomato paste • 12 oz fresh spinach • 1/2 teaspoon flour • 1 cup fat-free Greek yogurt • Salt + pepper to taste 👩🍳 Instructions 1. Heat oil In a large pan over medium heat, add olive oil. 2. Sauté aromatics Add onion and cook until translucent (~3 minutes). Add jalapeño and garlic, cook 1 minute. 3. Add tomato paste Stir in tomato paste and cook for another minute. 4. Cook spinach Add spinach in batches, letting it wilt before adding more. 5.
