I've made this before, but I added fresh baby spinach into mine. I've also done an Italian sausage version as well. Both delicious!

I use the same sun-dried tomatoes but it says to refrigerate after opening and that makes the oil harden. Do you warm it up before using or do you not refrigerate?

If you don’t have access to shallots, onion works fine just use a little less bc shallots are more mild.
