I've always used Je voudrais my French teacher made sure we used appropriate language 😂

Pretty sure “Je pourrais” translates more to “I could” and not “I can”

I mostly heard: un café s’il vous plaît. Pretty simple with basic manners. I don’t remember too many saying the longer more polite version. Could be my memory though

its the same in English "i want" is a bit rude, "i would like..." with "please" on the end is much more polite
