Some people think traditional Egyptian "heresh" food has to be heavy. I don't. This is my take on the classic Egyptian Sausage Pasta—lighter, fresher, but still packed with all the flavor. And hopefully... the perfect meal to celebrate Egypt's win over Argentina today. 🤞🇪🇬 Steps: Brown the sausage: Cut the sausage into bite-sized chunks to match the pasta. Cook in a hot pan over high heat with no oil until lightly browned. Remove using a slotted spoon, leaving the rendered fat behind. Build the sauce: In the sausage fat, cook diced onion until soft. Add diced garlic & parsley stems. Stir in harissa paste for spiciness & color. Add diced tomatoes, salt, black pepper, cumin, & ground coriander. Cover & cook until the tomatoes soften and release their juices. Finish the sauce: Remove the lid & discard the parsley stems. Mash the softened tomatoes to create the sauce. Add the green peppers and cook for 2–3 mins so they stay slightly crisp. Finish the pasta: While sauce in simmering, boil the pasta in salted water until just under. Add the sausage back to the sauce along with the pasta & a splash of pasta water. Keep stirring, adding more pasta water if needed, until the pasta is fully cooked and the sauce becomes glossy & coats everything. Turn off the heat and stir in the chopped parsley. Done. Lighter than the usual version, full of fresh tomato flavor, and proof that comfort food doesn't have to feel heavy. Ingredients (Serves 3-4): 400g Sausage 1 large onion, diced 4 garlic cloves, diced 4-5 tomatoes, diced 2 green peppers, sliced Parsley (stems & leaves separated) Harissa paste (to taste) 1 tsp cumin 1 tsp ground coriander Salt & pepper 400g pasta
